We are very careful in the process of cultivating our culture and test the culture multiple times a year for the absence of unwanted microbes. Our culture only ever gets organic ingredients.

What is Kombucha?

Kombucha is a fermented tea beverage. It is produced by a probiotic culture of bacteria and yeast that convert the sugar in the tea to healthy acids and enzymes. Kombucha can taste tart, sweet or like a combination of the two. NYCHA Kombucha uses organic Darjeeling tea and balances the tart and sweet flavor components to achieve a wonderful, healthy and refreshing beverage.

Why should I drink Kombucha?

People drink Kombucha first and foremost for its unique fermented flavor. But the beverage is not only tasty, it also contains many healthy ingredients, such as antioxidants from the green tea, healthy acids and enzymes form the fermentation process and living probiotic microbes. Further more it can help to detox organs through with its acids and low pH level.

Where does Kombucha come from?

Kombucha has been around for more than 2'000 years, and has been mostly popular in China and Japan. The Japanese word for tea "Cha" is where part of its name originates. It found its way to Europe in the beginning of the 20th century when Russian researchers where investigating its health benefits. Russia was actively looking for a cure of cancer and researchers tested investigated the folklore claims that Kombucha may help. Even though those claims could not be scientifically verified, Kombucha still spread as a healthy beverage through Europe and the western world.

Kombucha is fermented by a probiotic culture of bacteria and yeast, also known as SCOBY. The culture typically consists of bacteria such as Acetobacter, Gluconobacter and yeast strains such as Saccharomyces.
